Properties
Description
Amyloglucosidase from Aspergillus niger transfers glucose units from liquefied starch in a stepwise manner, giving rise to glucose.
Molecular Weight
143.5 kDa
Unit Definition
One unit of amyloglucosidase activity is defined as the amount of enzyme required to release one µmole of glucose-reducing-sugar equivalents per minute from soluble starch (10 mg/mL) at pH 4.5 at 40°C.
Applications
Amyloglucosidase from Aspergillus niger free is applied to yield glucose, beginning with the non-reducing ends of starch chains, and is suitable for the production of highly attenuated low carbohydrate beers.
