Amyloglucosidase from Rhizopus sp. transfers glucose units from liquefied starch in a stepwise manner, giving rise to glucose.
Unit Definition
One unit of amyloglucosidase activity is defined as the amount of enzyme required to release one µmole of D-glucose reducing-sugar equivalents per minute from soluble starch at pH 4.5 and 40°C.
Applications
Amyloglucosidase from Rhizopus sp. is applied to yield glucose, beginning with the non-reducing ends of starch chains, and is suitable for the production of highly attenuated low carbohydrate beers.
