Applications
Chitin from shrimp shells can be used to identify and characterize chitinase and chitin deacetylase, as a standard for studying the structure of chitin in other species, and as a standard for viscosity/thickening agent or adhesive. The chitin from shrimp shells can be used for chitin asthma and allergy research.
