α-Glucosidase from rice, an exoenzyme, is responsible for hydrolyzing (1→4)-linked α-D-glucose residues with the release of D-glucose.

One unit will convert 1.0 μmole of maltose to 2.0 μmoles of D-glucose per min at pH 4.0 at 37 °C.
