Unit Definition
One inulinase unit is equivalent to the amount of enzyme required to convert 1 micromole of reducing sugar per minute under specified conditions (pH 4.6, 60°C, 5%(w/v) inulin solution hydrolysis for 10 min).
Applications
Inulinase from Aspergillus niger can be used to measure fructans and inulins in the diagnostic industry.
