  • Identification
    Under the microscope, potato starch appears as transparent, colorless granules. It usually presents an irregular shape (ovoid, pear-shaped, or round) and its diameter ranges from 30 μm to 100 μm.
    In addition, potato starch particles exhibit characteristic dark crosses in polarised light.
  • pH
    Potato starch is dissolved in water and its pH is checked using a pH meter. The pH of potato starch should be 5.0 to 8.0.
  • Sulfur dioxide content
    Acid-base titration: Potato starch solution is titrated using ethanol solution of methyl red as indicator and sodium hydroxide solution as titrant. The sulfur dioxide content is calculated from the amount of sodium hydroxide used.
  • Oxidized substance content
    We titrate the potato starch solution with sodium thiosulfate solution as titrant. When the color of the solution fades, the titration is stopped. The amount of oxidized material in potato starch is calculated based on the amount of sodium thiosulphate used.
  • Loss on drying
    Potato starch is left to dry at high temperatures. It must not lose more than 20.0% of its weight.
  • Scorch residue
    The residue of potato starch left after thorough scorching shall not exceed 0.6% by weight.
  • Iron salt assay
    Dilute hydrochloric acid, ammonium persulphate, and ammonium thiocyanate are added to a solution of potato starch and compared with a standard iron solution. If the colors of the two solutions are the same, it proves that iron salts are present in the potato starch.
  • Heavy metal detection
    We offer the detection of metal elements in potato starch.
  • Microbiological limit
    The microbial enumeration method is used to detect the number of thermophilic bacteria and fungi in potato starch under aerobic conditions. Specific microbial enumeration methods include the flat dish method, membrane filtration method, and the most-probable-number method (MPN method).
    In potato starch, the total number of molds and yeasts must not exceed 102 cfu and Escherichia coli is not present.

Results: The authors monitored the pasting of potato starch and the effect of NaCl on the pasting of potato starch in situ by 1H NMR. The authors performed variable temperature 1H NMR measurements on potato starch and found that the degree of hydration of potato starch was determined with increasing temperature. The initial pasting temperature of potato starch in the presence of NaCl decreased from 331 K to 328 K. In addition, the authors tested potato starch gelation in situ using 1H NMR. The authors found that the pasting time was the main factor for potato starch to reach complete pasting compared to temperature.
