Recombinant Bacillus halodurans lichenase 16A produced by Escherichia coli, is a specific endo-(1-3),(1-4)-β-D-glucan 4-glucanohydrolase that solubilizes β-glucans from cereal grains by attacking β-(1,4) glucosidic linkages to give gluco-oligosaccharides.
