Recombinant Erwinia rhapontici sucrose glucosylmutase 13A produced by Escherichia coli, catalyzes the conversion of sucrose into isomaltulose (6-O-α-D-glucopyranosyl-D-fructose) and smaller amounts of trehalose (1-O-α-D-glucopyranosyl-β-D-fructose).
