Recombinant Pyrococcus horikoshii exo-β-glucosaminidase 35A produced by Escherichia coli, plays a role in the hydrolysis of chitosan or chitosan oligosaccharides. Its function is to remove successive D-glucosamine residues from the non-reducing termini.
