Results: This article focuses on the NMR spectra of sodium sodium gluconate solutions. The researchers found that the conformation of sodium gluconate in aqueous solution remained unchanged over the concentration range studied, with the presence of hydrogen bonding between sodium gluconate and water as well as the formation of aggregates. The flattened, jagged structure of sodium gluconate molecules in water was confirmed by ID 13C spectroscopy and 2D NMR spectroscopy. By fitting the theoretical spectrum to the experimental spectrum, the researchers were able to find the dihedral angle of the sodium gluconate molecule fairly accurately, and based on this, mapped its three-dimensional structure in an aqueous solution. In addition, interactions between sodium gluconate and calcium gluconate have been found through the 1H NMR spectra of their mixtures. These findings are important for further theoretical and experimental studies of gluconate hydrochloride.
