STL is a glycoprotein isolated from potatoes. It contains 50% carbohydrates that are composed of arabinose and galactose. It consists of two subunits (50 kDa). Results: In this study, a method was developed for the efficient extraction of heat-resistant lectins from potato tubers. The method involved ammonium sulfate precipitation, heat treatment, and ion exchange chromatography. The lectins extracted by the method were of high purity and the extraction time was greatly reduced.
