  • Identification
    • Under the microscope, tapioca starch has a single, round, or oval shape, and the diameter of the particles ranges from 5-35 μm. Under a polarising microscope, tapioca starch shows a polarised cross.
    • An aqueous solution of tapioca starch appears as a translucent gel-like substance after heating-cooling.
    • The addition of iodine test solution to the gelatinous substance described above results in a blue or blue-black coloration, which is gradually discolored by heating, and when cooled, the blue color reappears.
  • Acidity
    After dissolving the sample in water, we test it using a pH meter. The pH of tapioca starch should be between 4.5 and 7.0.
  • Detection of other substances
    • Foreign impurities
      Place the tapioca starch under a microscope and look for the presence of other foreign substances.
    • Sulfur dioxide
      We titrate tapioca starch solution using methyl red ethanol solution as indicator and sodium hydroxide solution as titrant. The titration is stopped when the tapioca starch solution turns yellow. The amount of sulfur dioxide contained in tapioca starch is calculated from the amount of titrant used.
    • Oxidizing substances
      At first, we add glacial acetic acid, potassium iodide, and starch indicator to the tapioca starch solution in turn. Next, we titrate it with sodium thiosulfate solution as a titrant. The experiment is stopped when the blue color of the solution disappears. The amount of oxidized material contained in tapioca starch is calculated based on the amount of sodium thiosulphate used.
    • Iron salt
      After dissolving tapioca starch in hydrochloric acid, ammonium persulfate is added to it. The solution is then compared with a standard iron solution, and if the colors match, the presence of iron salts in tapioca starch is proven.
  • Loss on drying
    The tapioca starch is dried at a higher temperature. At the end of drying, the weight loss of tapioca starch should not exceed 16.0%.
  • Microbiological limit
    • We offer microbiological enumeration to detect thermophilic bacteria and fungi growing under aerobic conditions.
    • We offer the control bacteria check method to detect the presence of specific microorganisms in tapioca starch.

Results: In this research, the authors determined the solubility, water absorption, thermodynamics, rheology, and microstructure of tapioca starch. The results showed that hydroxypropylated tapioca starch does not undergo any changes in particle size and shape. In contrast, the acid-treated tapioca starch granules were altered to produce smaller-sized starches. In addition, the authors found that the solubility of tapioca starch treated with acid decreased.
