  • Identification
    • The samples are placed under a microscope for observation, and the diameter of large particles of wheat starch is generally in the range of 10-60 μm, and the diameter of small particles is generally in the range of 2-10 μm.
    • The sample is dissolved in water and heated, and if a whitish translucent gel substance appears, the sample is proven to be wheat starch.
  • pH
    After dissolving wheat starch in water, we measure its pH with a pH meter. Wheat starch should have a pH between 4.5 and 7.0.
  • Sulfur dioxide content
    We employ an acid-base titration method for the detection of sulfur dioxide in wheat starch. In this, methyl red ethanol solution is used as the color indicator for the whole process, and sodium hydroxide solution is used as the titrant.
  • Oxidized substance content
    We titrate an aqueous solution of wheat starch using sodium thiosulphate as a titrant. If the color of the aqueous wheat starch solution changes, titration shall be stopped. From the quantity of sodium thiosulphate in use, it is possible to calculate the number of oxidation agents present in wheat starch.
  • Loss on drying
    We dry wheat starch in a high-temperature environment. The weight loss of wheat starch after drying should not exceed 15.0%.
  • Scorch residue
    The residue left after scorching of wheat starch shall not exceed 0.6%.
  • Microbiological limits
    The microbiological enumeration method is used to detect the number of thermophilic bacteria and fungi in wheat starch under aerobic conditions. Among the enumeration methods include the petri dish method, membrane filtration method, and most-probable-number method.
    In addition, we also provide the control bacteria check method to detect the presence of specific microorganisms in wheat starch.

Results: In this research, the authors explored the particle shape of wheat starch using SEM. The particles of wheat starch showed an overall oblate and round shape. Then, the authors examined the pasting temperature of wheat starch, which was 81.00-87.55°C. In addition, the authors determined the content of wheat starch using TG-FTIR, and the thermal decomposition temperature of wheat starch was determined using TG, which was 225-357°C.
