Results: In this study, the effects of ultrafine carbon black (UFCB) and Pb-UFCB on the structure and function of pepsin were examined by UV-Vis and circular dichroism. The results showed that UFCB and Pb-UFCB induced dynamic bursting of pepsin, which affected both its structure and function. This study provides an effective method and data support for the correlation analysis of pepsin in saccharated pepsin.
