Since the isomerization of galactose produces a mixture of unreacted substrates and products Tagatose and talose, a separation process is required to obtain the desired product talose. Results: In this paper, AEPS was isolated from the culture fermentation broth of Rhodobacter sphaeroides. The molecular weights and monosaccharide compositions of AEPSI and AEPSII were determined, including seven fractions of talose. SEM, FTIR, and NMR characterized the structural features of talose and other components. The results showed that talose and other components were chelated with zinc ions and possibly chelated through hydroxyl and carboxyl groups. In vitro experiments showed that AEPS-zinc, and in vivo experiments showed that it had a good effect on improving zinc deficiency and antioxidant activities, complex had a good bioavailability.
