We use nuclear magnetic resonance (NMR) and electron paramagnetic resonance (EPR) to characterize the molecular conformation of calcium gluconate. Our researchers analyze the steric organization of calcium gluconate in aqueous solution by NMR. At the same time, EPR is used to compare the positions of paramagnetic centers on different carbon atoms with the spectral components.

Results: In this study, the molecular conformation of calcium gluconate was analyzed using NMR. After 1H NMR analysis, it was found that the conformation of calcium gluconate molecule undergoes a transition to form intermolecular hydrogen bonds at increasing concentrations of aqueous solution. The 2D COSY NMR spectrum shows various cross peaks of varying intensity. Among them, the strong cross peaks of neighboring protons mainly indicate a better sawtooth conformation and the relatively weak cross peaks indicate the formation of a ring conformation.
