Galactose is a monosaccharide and is often found in plant, animal, and microbial sugars. Galactose is an important structural molecule in hydroxyethylcellulose, which is an important component of plant cell walls, maintaining cell morphology, providing mechanical strength, and protecting plant cells. Galactose is also essential for human metabolism and has an important role in energy transfer and galactosylation of complex molecules. It serves as a sugar source for cellular metabolism for energy supply and metabolism after being synthesized. Galactose can be converted to glucose via metabolic pathways to provide energy to cells and can also be chemically covalently bound to proteins to form a specific glycosylation modification that has important effects on protein stability, structure, and function. Many studies have shown that galactose has also certain biological activities in pharmacology, for example, it has certain effects on the protection of cardiovascular vessels and against diseases such as diabetes.
