Mannose is a monosaccharide with the chemical formula C6H12O6, which is a tautomer of glucose. They have the same chemical formula but different molecular structures. There are many types of mannoses, and a mannose includes at least 30 different isomers. The most common of them are α-D-mannose, β-D-mannose, α-L-mannose, β-L-mannose, etc. Mannose is involved in carbohydrate metabolism processes in living organisms and it is also involved in intercellular interactions. For example, in the interaction between glycoproteins of cell membranes and the extracellular matrix, mannose groups on glycoproteins can interact with a variety of proteins, thereby regulating the viscosity of the extracellular matrix, protein distribution, and function.
