Results: This article focuses on the effect of different types of starch on the texture and rehydration properties of extruded peanut protein pore gel particles. The study utilized various techniques for the analysis and characterization of pea starch. Firstly, XRD was employed to determine the crystal structure and morphology of pea starch. Then, TGA was used to investigate the thermal stability and decomposition behavior of pea starch. Furthermore, FT-IR was applied to analyze the chemical structure and functional groups present in pea starch. Finally, SEM was utilized for observing the morphology and surface characteristics of pea starch, while particle size analysis was conducted to measure its size distribution. These techniques provided comprehensive insights into the structure, properties, and morphology of Pea Starch, facilitating its thorough analysis and characterization.
